Cajun Spiced Roast Chicken

Ingredients

• 1 whole chicken
• 3 tbsp butter
• 2 tbsp duck fat
• 1 tbsp smoked paprika
• 1 tsp chili powder
• 1 tsp garlic powder
• 1 tsp salt
• 1 tsp black pepper
• 2 tbsp Cajun seasoning/mixed BBQ spice

Instructions

1. Preheat oven to 220°C
2. Clean and trim the whole chicken.
3. Cut it down the back and flatten (let me know if you need a spatchcock video).
4. Mix all the spices into the butter and duck fat in a bowl.
5. Lather and massage your chicken with the mixture.
6. Place on parchment paper with your favorite veggies and roast for 45 minutes.
